1 cup of sugar

4 peeled and seeded apples, cut into quarters
6 fresh apricots or your preferred fruit
2 pears, peeled and cored
1 1/2 cups of chilled champagne
juice from 1 lemon

Mix the sugar and water
Let it boil
Cook for 5 minutes
Peel and cook the apples in the same liquid for 15 minutes, or until they are tender
Remove the apples with a slotted spoon and reserve
Cook the apricots in the same manner for 5 minutes, or until they are tender
Remove them from the liquid and reserve
Add 2 pears, peeled and cored, cut into quarters
Cook for an additional 15 minutes, or until they are tender
Remove from the liquid and reserve the liquid
Arrange the fruits in a compote dish and let it cool
Refrigerate
Let the liquid cool, add the chilled champagne and lemon juice
Place it in the freezer for a few minutes
Pour it over the fruits in the compote dish
Serve 4 portions.
