1 cup of sugar

4 peeled and seeded apples, cut into quarters
6 fresh plums or fruit of your choice
2 pears
1 1/2 cups of frozen champagne
Juice from 1 lemon

Mix the sugar and water
Let it boil
Cook for 5 minutes
Peel the apples, then cook them in the syrup for 15 minutes or until they're tender
Remove the apples with a slotted spoon and reserve
Cook the plums in the same way for 5 minutes, or until they're tender
Remove them from the syrup and reserve
Add the peeled pears to the syrup and cook for an additional 15 minutes or until they're tender
Remove them from the syrup and reserve
Assemble the fruit in a compote dish and let it cool
Refrigerate
After the syrup has cooled, add the frozen champagne and lemon juice
Place the mixture in the freezer for a few minutes before serving over the fruit.
