2 tablespoons cornstarch
1/2 cup granulated sugar
2 cups freshly squeezed orange juice
2 egg yolks beaten
1/2 teaspoon grated lime zest
1/2 teaspoon vanilla extract
3 oranges peeled, chopped, and strained
orange zest for garnish

Mix cornstarch and sugar well
Add a little orange juice and mix until smooth
Add the remaining orange juice and stir well
Bring to a boil over medium heat, whisking constantly, and cook for 3-5 minutes
Remove from heat
Immediately add 3 tablespoons of this warm mixture to the beaten egg yolks and mix well
Add the remaining warm mixture
Cook over low heat, stirring until thickened
Let cool
Add grated lime zest and vanilla extract
Chill in refrigerator
If oranges are candied, sprinkle with a little sugar
Assemble in a bowl layers of orange and cream
Garnish with orange zest and serve chilled
Serves 4-6.
