Peel the watermelon and cut it into pieces
Discard the seeds
Place the fruit in a large pot and cook over low heat for 30 minutes
Add the remaining ingredients and let it simmer for 1 hour and 30 minutes, or until the watermelon is well-cooked and slightly caramelized
Serve warm
To garnish, make flowers using the rind of the fruit and a cookie cutter.
