8 tangerines
1 cup of sugar

3 sprigs of rosemary
1 cinnamon stick
3 tablespoons of lemon juice

Peel the tangerines and separate the membranes
Remove the skin, without tearing the membranes, and reserve
Combine in a saucepan the sugar, water, rosemary, and cinnamon stick
Stir until the sugar dissolves and bring the saucepan to low heat
Cook for approximately 7 minutes or until a syrupy consistency is reached
Remove from heat and discard the rosemary and cinnamon stick
Add the lemon juice and stir well
Place the tangerine membranes into the syrup and let it cool completely
Arrange in a compote dish and refrigerate overnight
Serve the sweet treat at room temperature.
