Gently heat the beef broth with all the ingredients over low heat, and cook for 1 hour
Strain the liquid through multiple layers of cheesecloth
Refrigerate and remove any sediment at the bottom
Carefully place the consommé into 1-liter containers to prevent any sediment from mixing with the clear liquid
You will obtain 3 liters of transparent consommé that can be stored in the refrigerator for several weeks
Heat the required amount of consommé in a saucepan, adjust the seasoning and serve hot garnished with chopped parsley, grated cheese or toasted bread cubes
