1 1.5-2 kg chicken

Clean the chicken and cut it into small pieces
Pour boiling water over the chicken, parsley, sauce, and onion
Cover and simmer at a boil for 3 hours or until the chicken is tender
Remove the chicken
Strain the broth and season
Serves 8
To obtain a vegetable consommé, add diced onions, carrots, chopped parsley, half cup of parsley, and 1/2 cup of tomatoes to the chicken broth
Simmer until the vegetables are tender.
