In a pressure cooker, heat the olive oil over high heat
Add the meat and cook, stirring occasionally, until browned on all sides (about 7 minutes)
Mash the remaining ingredients together in a processor to obtain a homogeneous mixture
Pour it over the meat, cover the cooker, and bring to a boil
When the valve starts to whistle, reduce the heat and cook for about 50 minutes
Remove from heat, let pressure end, then open the cooker
Transfer the meat to a serving dish, cut into slices, drizzle with the cooking sauce, and serve immediately
