Peel the shrimp
Reserve the shells and cook them with 1 xicara of water
Let it simmer for 3 minutes
Cut the shrimp into small pieces, leaving 4 whole ones to garnish
Cook them in the broth from the reserved shells for 3 minutes
Drain and reserve the broth
Blend the papayas, peeled, with 1/3 of xicara of the reserved broth, until creamy
Season with pepper sauce, lime juice, and salt if desired
In 4 small glasses, make layers of papaya cream and chopped shrimp
Sprinkle with parsley and garnish each glass with a whole shrimp
