1 kg of pork loin

"1/2 cup of orange marmalade, strained and cut into strips (200 g)"

"1 carrot, peeled"
"1 celery stalk, chopped"

"1 garlic clove, minced (only the white part)"

Open the pork loin in half, without separating the halves, and season with salt and pepper
Stuff it with orange marmalade and cheese and close it
Fry it in olive oil and reserve
In the same pan, sauté the carrot, celery, onion, and garlic
Place the pork loin on a baking sheet, spread the sautéed vegetables around it, and drizzle with olive oil
Cover with aluminum foil and bake in a medium oven for 45 minutes
Remove from the oven and reserve
Pour the red wine into the baking dish and bring to the boil
Scrape the pan bottom with a wooden spoon and stir well
Serve the pork chops sliced, with the vegetables on the side, and drizzle with the sauce.
