Clean and cut the pork ribs
Season with salt, black pepper, and garlic
Place the olive oil in a large skillet, add the pork ribs, and fry over low heat until browned
Cover the skillet and let cook in its own juices for 40 minutes or until tender
Remove the pork ribs, drain excess fat, reserving 2 tablespoons
In the same skillet, sauté the okra and reserved fat for 3 minutes, then add the cooked black beans and water, cooking until the okra is tender but still slightly crisp
Serve 4 to 6 people
