1 kg of pork ribs, cut into manageable pieces
1/4 cup of soy sauce
2 tablespoons of honey
2 tablespoons of white wine vinegar
1 tablespoon of red wine or sherry wine
1 tablespoon of finely chopped garlic
1 tablespoon of paprika
2 tablespoons of chicken broth

Remove excess fat from the pork ribs with a sharp knife
In a small bowl, whisk together soy sauce, honey, white wine vinegar, red wine or sherry wine, garlic, paprika, and chicken broth
Pour this marinade over the pork ribs in a baking dish
Let them sit at room temperature for 3 hours, turning them occasionally and basting with the marinade as needed
Heat the oven to moderate (170°F)
Bake the pork ribs for about 45 minutes
Increase the oven temperature to hot (200°F) and bake for an additional 15 minutes, or until the pork ribs are nicely browned and crispy
When serving, separate the pork ribs with a sharp knife
If they're too large, cut them in half
Serve warm, with amaretto gelato
