1 cauliflower floret

2 lightly beaten eggs

Remove the green leaves and stem from the cauliflower and separate into florets
Wash well and cook in boiling water with salt until slightly tender but still firm
Drain
In a small bowl, mix together flour, salt, and black pepper, and reserve
In another bowl, beat eggs with olive oil
Heat a good quantity of olive oil in a pan
Coat the cauliflower florets in the egg mixture, then in the flour mixture, and fry for 2-4 minutes on each side until golden brown, turning occasionally
Drain on paper towels
Serve 4 to 6 portions
