Melt the butter or margarine
Add the flour
Cook, stirring for 3 minutes
Add the milk, cream, and salt
Cook, stirring until thickened
Remove from heat and add the mustard
Mix in the egg yolk and wine or lemon juice
Add a little of the pan sauce and mix well
Place in the pan with the remaining sauce
Mix and heat without boiling
Serve over flower sprouts for 4 people.
