1 medium chicory head
Salt to taste
1/2 cup mayonnaise
2 tablespoons Dijon mustard
3/4 cup grated strong cheddar cheese

Remove the leaves and toughest part of the stalk from the chicory, and cook it whole for 12-15 minutes in boiling salted water; drain well
Place the chicory in a shallow dish
Sprinkle lightly with salt
Mix together the mayonnaise and mustard
Spread over the chicory
Sprinkle with grated cheese
Bake in a moderate oven for about 10 minutes or until the cheese is melted
Serve warm on a heated platter, garnished with 4-5 portions
