2 chicken breasts
6 cups (scant) of water
1 tablespoon of salt
2 tablespoons of butter
1 small package of grated cheese
1 kg of wheat flour
2 tablets of vegetable broth
2 tomatoes, seeds removed and chopped
2 onions, chopped
Salt, black pepper, and parsley, chopped to taste
2 eggs beaten for coating
Breadcrumbs for coating
Oil for frying

In a pot, place the chicken breasts and cover with water
Cook until they are tender
Remove the chicken breasts and set aside
In the same pot, add salt, butter until it dissolves, mix in grated cheese and gradually add wheat flour, stirring always until the mixture forms a ball at the bottom of the pot
Cook for an additional three minutes, then pour the mixture into a plate and let cool slightly
Sift the mixture to make it smooth
Chop the chicken breasts and fry them with the remaining ingredients
Separate a portion of the dough at a time and open it by hand, forming a cavity
Place the filling and shape into a coxinha form
Dip the coxinhas in beaten eggs and then in breadcrumbs, frying them in hot oil.
