Mix the wheat flour slowly with the beer and a pinch of salt until it reaches the consistency of a liquid cream
Add the olive oil and let it rest for an hour
In the final moment, add the beaten egg white to the dough, making sure it's as firm as snow
Recipe for 'fritters': Cut thin slices of mozzarella cheese
Dip them in the batter, covering them well, and immediately fry them in hot oil
The fritters should turn a golden yellow color
At this point, remove them and place them on top of absorbent paper for a few seconds to remove excess grease
Serve warm.
