In a pan, melt the butter and sauté the onion
Then, add the tomato extract and season with salt
Beat two eggs, corn, and flour in a blender
Add the mixture to the cooked filling and cook until it's free from the pan
Remove from heat, let cool, and shape into fritters, filling with mozzarella
Dip the fritters in beaten egg and then in bread crumbs
Fry in hot oil until golden brown.
