Melt the butter and mix well with the wheat flour over low heat
Add the chicken broth and continue mixing until a cream forms
Taste and adjust seasoning as needed
Let it cool slightly and add the egg yolk
Mix well
Dust your hands and face with wheat flour, shape the fritters by placing a piece of cooked chicken in the center of each one
Coat the fritters with biscuit flour, beaten eggs, and then again with biscuit flour
Fry the fritters in hot oil
Once fried, skewer each one with a toothpick.
