1 bagel
2 oz cream cheese
2 oz smoked salmon fillet
1/2 red onion, thinly sliced
1/2 green tomato, cut into thin slices
1 tablespoon pesto sauce
Pesto Sauce
2 oz chopped almonds
3 oz fresh mint leaves
5 fl oz olive oil
3 cloves garlic, minced
Salt to taste
1 bagel

Cut the bagel in half and spread cream cheese on both halves
Fill with smoked salmon, red onion, and green tomato
Add pesto sauce
Close the sandwich with the other bagel half
Serve with potato chips
Pesto Sauce
Blend all ingredients in a blender for 3 minutes
Store in the refrigerator in an airtight container and use when needed.
