1/2 kg of cod
1/3 cup of oil or olive oil
2 large red bell peppers, chopped coarsely (280 g)
2 large onions, chopped coarsely (330 g)
3 cloves of garlic, minced
1 cup of tomato chunks, seedless
1/2 kg of cooked corn, drained
6 small potatoes, peeled and cut into quarters (490 g)
1/3 cup of chopped parsley
1/2 teaspoon of dried oregano
1 sprig of rosemary
1 cup of white wine
2 cups of water
1/2 kg of cod

Soak the cod in cold water in a glass container, covering it completely, for 24 hours
Change the water several times
Drain and pat dry the cod
In a large frying pan, heat 3 tablespoons of oil
Fry the cod pieces, turning them once, until they start to brown
Remove with a slotted spoon and place on a plate
Add the remaining oil to the pan
Cook the onion and garlic, stirring until soft
Add the tomatoes, corn, potatoes, parsley, oregano, rosemary, cod, wine, and water (enough to cover the ingredients)
Bring to a simmer, reduce heat, and cook slowly for 40 minutes or until the cod is cooked through
Add the bell pepper in the last 5 minutes of cooking
Serve hot
