8 cups of white beans, raw
6 cups of chopped onions
1/2 cup of butter or margarine
3 lbs of chorizo sausage, cut into 1 cm slices
2 lbs of pork loin, cut into cubes
1 lb of cooked beef, sliced thinly
4 tablespoons of paprika
salt and black pepper to taste
1 1/2 tablespoons of dried marjoram or thyme
1/2 cup of chopped fresh parsley
1/2 cup of chopped green scallions

In a large pot, melt the butter and add the pork loin
Let it brown
Cook for an additional 5 minutes, or until lightly browned
Add the beef and sausage
Cook for another 5 minutes, or until slightly browned
Add the chopped onions
Cook, stirring constantly, until they're caramelized
Add the white beans with their liquid from the day before, along with paprika, salt, black pepper, marjoram or thyme, parsley, and scallions
Add enough water to cover everything and bring to a boil
Cover and simmer for 1 hour and 30 minutes, or until the beans are tender but not mushy
If the liquid doesn't thicken enough, let it simmer uncovered for an additional 10-15 minutes, or until it reaches the desired consistency
Serve in 6 portions.
