300g fresh tomatoes, peeled and chopped

Cook the white beans with water and salt
In a ceramic pot, combine the olive oil, thinly sliced onion, chopped celery, seasoned pork sausage links or cooked bacon, and salt
Cook over low heat until golden brown
Add the dry white wine and let it cook until the liquid is reduced
Add the chopped tomatoes and cook for a few minutes
Add the cooked white beans and 1 cup of water used to cook them
Simmer over low heat until the sauce thickens
Serve hot, garnished with fresh parsley or thyme
