Dissolve the gelatin in cold water and melt it in a double boiler
While stirring, add the strawberries, lemon juice, and salt
Let it set until partially firm
Add the whipped cream while stirring
Use a red food coloring to give the mixture a pinkish hue
Place slices of Rocambole with gelato filling around a mold that opens like a box
Filling with the strawberry mixture and let it set until firm, which takes approximately 4 hours
Garnish with sliced strawberries
Serves 8-10 portions
