1/2 cup of freshly squeezed lime-orange juice
1/2 teaspoon unflavored gelatin
1 tablespoon cornstarch
For the cream
1/2 small ripe avocado
1/2 tablespoon freshly squeezed lemon juice
1/4 cup freshly squeezed lime-orange juice
2 tablespoons cornstarch
1/2 cup of freshly squeezed lime-orange juice
1/2 teaspoon unflavored gelatin
1 tablespoon cornstarch
For the cream
1/2 small ripe avocado
1/2 tablespoon freshly squeezed lemon juice
1/4 cup freshly squeezed lime-orange juice
2 tablespoons cornstarch
In a small bowl, mix the lime-orange juice with the gelatin and let it hydrate for a few minutes
Add the cornstarch and heat it over low heat in a double boiler, stirring until the gelatin is fully dissolved
Pour the mixture into a small mold or tray and refrigerate until the gelatin sets
Prepare the cream Just before serving, blend the avocado with the remaining ingredients in a blender and divide into small cups
With various-shaped molds, cut the gelatin and place it over the cream, serving immediately.
