3/4 cup of pineapple chunks

2 ripe bananas, mashed

1 cup of sponge cake crumbs
1/2 teaspoon of vanilla extract
1 tablespoon of shredded coconut
3 maraschino cherries

Sprinkle the pineapple with sugar and reserve
Beat the whipped cream until firm, then add the bananas, nuts or hazelnuts, sponge cake, vanilla extract, and pineapple
Place this mixture in 6 tall glasses or parfait dishes, sprinkle with shredded coconut, and garnish with half a maraschino cherry
Refrigerate at serving time
Serve 6 portions.
