Thinly slice the onions and cook them over low heat in a pan with no added liquid, allowing them to soften as they release their natural juices
When the onions start to dry out, sprinkle them with salt and pepper
Add the evaporated milk, enough to cover the onions; mix well and let it simmer slowly
Repeat the process using the remaining milk from the can; let it dry out and top with cheese
Hold a lid on the pan over low heat until the cheese has melted
Serve with roasted meats or pancakes.
