1/2 cup (about 3/4 cup) of chopped pecans

1/2 cup of sugar
1/4 cup of cornstarch
4 tablespoons of almond extract (amaretto)
2 whole pecans, halved (for garnish)

1 In a blender, combine all the ingredients to obtain a smooth mixture
2 Pour into a 9-inch-diameter serving dish, cover and microwave on medium for four minutes or until thickened, stirring every minute
3 Remove from the microwave and stir well
Avoid stirring too much, as this can cause the cream to become too thin
Distribute the cream among four ramekins
4 Cover with plastic wrap stuck to the cream and refrigerate until firm (about an hour)
Garnish with the halved pecans and serve immediately.
