4 egg yolks
1/2 cup granulated sugar

1/4 cup freshly squeezed lime juice
1 cup heavy cream

Beat the egg yolks with 1/2 cup granulated sugar in a bain-marie until thickened
Add the lime zest and juice
Cook over low heat, stirring constantly, until thickened and smooth
This takes about 10 minutes
Remove from heat
Let cool completely, stirring occasionally
Whip the heavy cream and fold in half of it with the egg yolk mixture, mixing carefully
Portion into 4 individual serving dishes, refrigerate for 1 night
Serve by topping with the remaining whipped cream.
