Peel the sweet potato, cut it into medium pieces and boil in boiling water until tender
Drain and transfer to a blender
Blend until forming a paste. Reserve
Separately, cook the pineapple with water on low heat until it forms a thin syrup
Add the blended sweet potato and mix well with a wooden spoon until homogeneous
Beat the eggs with milk and pour into the pot
Add vanilla essence and cook for 3 minutes
Remove from heat and pour into individual cups
