Dough:
1 1/4 cup milk
2 tablespoons unsalted butter, at room temperature
4 eggs
1 1/2 cups all-purpose flour
1 tablespoon active dry yeast
Filling:
1 cup passion fruit juice concentrate
1 cup water
4 tablespoons cornstarch
3/4 cup sugar
2 egg whites
Sauce:
2 yolks.
4 tablespoons all-purpose flour
1 cup water
1/4 cup unsalted butter
Dough:
1 1/4 cup milk
2 tablespoons unsalted butter, at room temperature
4 eggs
1 1/2 cups all-purpose flour
1 tablespoon active dry yeast
Filling:
1 cup passion fruit juice concentrate
1 cup water
4 tablespoons cornstarch
3/4 cup sugar
2 egg whites
Sauce:
2 yolks.
4 tablespoons all-purpose flour
1 cup water
1/4 cup unsalted butter
To make the dough: blend all ingredients in a blender until smooth
Fry approximately 2 tablespoons of the dough at a time, in a small non-stick skillet or griddle
Repeat this process until the dough is used up
Place a little of the filling on each crepe and roll it up
When serving, drizzle a little of the sauce over each crepe
To make the filling: in a saucepan, mix together the passion fruit juice, water, cornstarch, and 2/4 cup sugar
Bring to a simmer, stirring constantly, until thickened
Remove from heat and let cool, stirring occasionally
Beat the egg whites until stiff and fold in the remaining 1/4 cup sugar
Mix gently with the cooled passion fruit filling and fill the crepes
To make the sauce: in a small bowl, mix together the yolks, flour, and water
Bring to a simmer over low heat, stirring constantly, until thickened
Do not let boil.
