Butter a large sheet of parchment paper and reserve
In a saucepan, combine the sugar and corn syrup and bring to medium heat, stirring occasionally, for 10 minutes or until a dark caramel forms
Add the peanuts and mix well
Remove from heat, add baking soda and mix quickly
Pour onto the prepared parchment paper and spread
When cooled, remove the parchment paper and place the brittle on a wooden board
Use a mallet to break it into irregular pieces.
