3 tablespoons of butter or margarine
3 tablespoons of all-purpose flour
1 cup of milk
1 cup of grated cheddar cheese
2 cloves of finely chopped onion
salt
1 tablespoon of prepared mustard
a few drops of hot sauce
2 cups of cooked rice
2 cups of panko breadcrumbs, sifted
1 egg, lightly beaten with 2 tablespoons of water
oil for frying

Melt the butter or margarine in a pan, add the flour and mix well
While that's happening, scald the milk and add it to the mixture, beating vigorously
Add the cheese, salt, onion, hot sauce, and mustard, mixing very well
Add the rice and mix delicately
Refrigerate
Prepare the fritters with the rice, coat in panko breadcrumbs, then in the egg mixture (beaten with 1 tablespoon of water) and again in panko breadcrumbs
Heat a sufficient amount of oil in a frying pan and fry the fritters until they're nicely golden
Drian on paper towels and serve
Yield: 4 to 6 servings.
