2 small cans of tuna in water
1/4 cup all-purpose flour
2/3 cup milk
1/2 cup frozen peas
1/4 cup breadcrumbs
1/3 cup chopped parsley
Oil for frying

Dissolve two tablespoons of flour in the milk and place it in a small saucepan
Add salt and pepper and cook over low heat, stirring constantly, until thickened
Add the peas, stir well, and remove from heat
Transfer to another pan and add the tuna, breadcrumbs, and parsley
Mix well and shape into croquettes with greased hands
Dredge the croquettes in remaining flour and fry in hot oil until golden brown
Drain on paper towels and serve hot.
