Peel the potatoes and soak them in water
Let them rest for 10 minutes
Drain, wrap with aluminum foil and bake in a medium oven
Bake until soft
Remove from oven, unwrap and mash the potato with a fork
Combine with butter, beaten eggs, salt, and pepper
Mix well, spread the mixture on a greased baking dish and let it cool
Shape into croquettes using floured hands
Dip in flour, then egg, and finally bread crumbs
Fry in hot oil
Drain on paper towels and serve with mustard or ketchup.
