Cook the sweet potatoes a day in advance of preparing the croquettes
Soak them in cold water and peel
Refrigerate overnight
The next day, pass through a ricer and place in a bowl
Add 3 egg yolks and mix very well
Season with salt to taste
Break an egg into a plate and whisk lightly with a fork
Place the amarelinas on another plate
Shape croquettes with the sweet potato mixture, first dipping in the egg and then in the amarelinas
Heat the frying oil
Fry the croquettes until golden brown
Drain on paper towels
Serve hot.
