1 kg of peeled and cut sweet potatoes into 4 pieces
3 tablespoons of butter or margarine
1 medium onion, finely chopped
2 egg yolks
2 tablespoons of milk
salt and black pepper to taste
To pass:
1 cup of all-purpose flour
2 beaten eggs
2 cups of breadcrumbs (5-6 slices) from a bread loaf that has been blended in a blender (5-6 slices)
Frying oil

Place the sweet potatoes in a pot
Cover with cold water
Let it boil, then reduce heat and simmer for 15 minutes or until they are soft
Drain and blend
In a skillet, melt the butter or margarine
Add the onion and fry until soft and slightly golden (about 3 minutes)
In a medium bowl, mix together the sweet potato, fried onion, egg yolks, milk, salt, and black pepper
Mix very well
Chill in the refrigerator for 3 hours or overnight
Shape the fritters, first coating them with flour, then with eggs, and finally with breadcrumbs
Fry in hot oil for about 3 minutes or until golden brown
Make approximately 32 fritters
Note: You can also add 1 cup of leftover cooked vegetables, meats, or poultry, finely chopped.
