Cook the potatoes a day in advance
The next day, peel and grate them coarsely, then mix with cheese, egg, and flour until a smooth dough forms (about 1 tablespoon per croquette)
If necessary, add a bit more flour
Add parsley and scallion to taste, then season
Heat oil, fry the croquettes in batches until golden brown on both sides
Serve as an appetizer or with meats or poultry dishes
