In a bowl, mix the carrots or yams with the seasonings and an egg
Mix until you get a consistent and smooth dough
Mold into balls or croquettes and coat first in breadcrumbs, then in the beaten egg, and again in breadcrumbs
Fry until crispy
Yield 24 croquettes.
