2 tablespoons of olive oil
1/3 cup of finely chopped onion
2 tablespoons of chopped fresh parsley
1/2 pound of cooked or braised beef, finely chopped
1/3 cup of water
1 tablespoon of all-purpose flour
Salt and black pepper to taste
1 egg, lightly beaten
2 cups of breadcrumbs
Oil for frying

In a saucepan, heat the olive oil and sauté the onion and parsley until softened
Transfer to a food processor and add the beef
Add the water and process until coarsely chopped
Transfer to a saucepan and dust with a little flour
Season with salt and pepper and cook over low heat, stirring constantly, until the mixture starts to brown at the bottom of the pan
If necessary, add more flour
Let it cool
With your hands shape the croquettes and coat them in the beaten egg and breadcrumbs
Fry a few at a time in hot oil until golden brown
Remove with a slotted spoon and drain on paper towels
Serve hot.
