Peel and wash the sweet potatoes
Boil in salted water
Pass through a hot potato masher while still warm
Let the mixture cool down
Add butter and 2 egg yolks
Mix well
Add enough wheat flour to form a roll with the mixture
Season to taste with salt and nutmeg
Form croquettes of 6 cm length and 3 cm thickness using the mixture
Dip the croquettes in lightly beaten eggs and then in bread crumb or shredded coconut
Fry in hot coconut oil until golden brown.
