6 toasted bread slices

6 slices of mozzarella
1 small tomato, cut into slices
Salt and pepper to taste
1 tablespoon parsley leaves
2 tablespoons olive oil

2 tablespoons olive oil
Spread butter on the toast, then top each slice with a layer of mozzarella
Cover with a tomato slice and season with salt and pepper
Sprinkle parsley leaves over each toast and drizzle with a thin stream of olive oil
Place in a moderate oven (350°F) for 10 minutes, or until the mozzarella is melted
Serve warm, cut into 6 pieces.
