6 grams of thyme, coarsely ground
1 teaspoon of grated nutmeg
1 tablespoon of chopped coriander

Melt the butter with the olive oil and sauté the onion
Add the meat cubes and gradually sprinkle the wheat flour while stirring constantly
Combine the rosemary, wine, beef broth, and spices
Cook for about 30 minutes or until the meat is tender
If necessary, add salt
Serve immediately with steamed peas passed in butter.
