1 basic recipe for cornmeal
750 g of beef (or lamb chops)
2 carrots
1 turnip
2 Italian zucchinis
2 onions
50 ml of extra virgin olive oil
50 g of tomato extract
50 g of harissa*
1 pinch of saffron
1 teaspoon of ground cumin
1 small handful of cilantro
Coarse salt and black pepper

Heat the olive oil in a pot, then brown the meat, cut into cubes, and the finely chopped onion
Add the tomato extract, harissa, pepper, and salt
Add water to reach halfway up the pot and bring to a simmer
Cook on low heat for about 1 hour
Meanwhile, clean the vegetables and cut them into small pieces
When the meat is cooked, add the carrots and turnip to the pot
After 10 minutes, add the zucchini and cook for an additional 10-15 minutes
Adjust the seasoning and add the spices
Turn off the heat and add the chopped cilantro
Place the cooked cornmeal on one side of a plate and the vegetables on the other
Arrange the meat cubes in the center.,
Drizzle with the cooking broth and serve immediately
* A type of pepper paste that can be found in some gourmet stores.
