For the seafood sauce
1/4 cup of olive oil
2 medium onions, sliced
1 kg of tomato, peeled (pass seeds through a sieve and use only the juice), diced
1/4 cup of chopped parsley or cilantro
500g of cooked mussels, without shells
300g of cleaned squid, cut into rings
500g of clams in their shells, well washed
500g of shrimp, peeled (optional)
1/4 cup of lemon juice
Salt and black pepper to taste
For the rice
2 cups of water (480ml)
2 tablespoons of olive oil
2 1/2 cups of pre-cooked rice (500g)
4 tablespoons of butter
Salt to taste

Prepare the seafood sauce: put a medium pan over medium heat, with the olive oil and onion
Saute for 4 minutes
Add the tomato and parsley
When boiling, reduce heat and cook for 15 minutes
Join the seafood and cook until the clams' shells open
Add lemon juice and season to taste
Make the rice: put a pan over medium heat with water and olive oil
Season with salt and, when boiling, add the rice and butter
Remove from heat and stir with a fork until all the water is absorbed
Serve in a dish, with the rice in the center and the seafood sauce around it
