1 cup of couscous (Moroccan couscous)
3/4 cup of water
1/4 cup of passionfruit concentrate
10 tablespoons of sugar
6 tablespoons of granulated sugar
3 tablespoons of balsamic vinegar
1 small banana, cut into cubes
1 kiwi, peeled and cut into cubes
1 red apple, cut into cubes
1 pear, peeled and cut into cubes
1 cup of couscous (Moroccan couscous)
3/4 cup of water

6 tablespoons of granulated sugar
3 tablespoons of balsamic vinegar

Bring the sugar to a medium heat, stirring constantly, until it starts to melt
Add the balsamic vinegar gradually, stirring well, until the sugar is fully dissolved
Add the fruits, mix well, and remove from heat
Boil water in another pot until it starts to simmer
Remove from heat and add the couscous, passionfruit concentrate, and granulated sugar
Mix well and let rest for 5 minutes
Heat up the fruit syrup
Using a spatula, shape each serving of couscous into a ball and place in each plate
Surround with the fruit syrup and serve.
