Mince the onion, garlic, tomato, and finger pepper using a processor
Heat the olive oil in a large pot over medium heat for 10 minutes, adding all the aromatics
Add the dobradinha and cook for an additional 15 minutes
Add the sausage and 3 cups of water
Cover the pot and simmer for 40 minutes from the boil
Remove from heat, let the pressure release, then open the lid
Add the white beans, salt, dry white wine, and remaining water
Cook for an additional 50 minutes, starting from the boil
Remove from heat, let the pressure release, then open the lid
Check the seasoning
Serve hot.
