Pit the pineapple, cut it into slices and remove the core
Cut each slice in half and set aside
In a large saucepan, bring the sugar to a boil over high heat, stirring occasionally, until caramelized
Reduce the heat and gradually add the water, stirring constantly, until the syrup thickens
Add the pineapple and increase the heat
When it boils, reduce the heat, cover the pan, and simmer for 20 minutes
Add the cherries, stir, and remove from the heat
