In a large pot over high heat, cook the pumpkin with the water, stirring occasionally with a wooden spoon for 35 minutes or until the pumpkin breaks apart
Add the sugar and continue cooking, stirring constantly, for another 25 minutes or until the liquid evaporates
Add the coconut shreds
Stir and cook until the sweet mixture comes loose from the bottom of the pot and becomes creamy and shiny
Transfer to a serving dish, let it cool and serve.
