Soak the damson fruit in water for approximately 1 hour or until it softens
Blend the soaked fruit with the water
Transfer to a saucepan
Add sugar
Bring to a boil, stirring constantly, until the sugar dissolves
Continue cooking, stirring occasionally, until the mixture pulls away from the sides of the pan and, using a spatula, appears at the bottom of the pan
Transfer to a sterilized glass jar and seal tightly
Yield: 1.5 liters of gelatin.
